pumpkin soup with a difference
And for all those who are looking for a pumpkin soup recipe with a difference – here is one! I received it from a friend of my mom-in-law.
Pumpkin Soup (makes 4 – 6 servings)
2 Tbsp Butter
1 tsp Paprika or Chili or Curry powder
200 ml Cream
200 ml Orange Juice
600 ml Vegetable or Chicken Stock
Salt, Pepper to taste
Peel and de-seed pumpkin, cut flesh into cubes. Cube onion.
In a large pot, heat butter and soften onion and pumpkin cubes. Add paprika or chili or curry powder, and chicken stock. Simmer until pumpkin is soft, about 15 – 20 minutes.
Using your blender, purée pumpkin. Add cream and orange juice, reheat and add salt and pepper to taste.
Enjoy with freshly baked bread.
